One-Pan Salmon Asparagus Recipe

Ingredients:

  • Servings: 6 as a main course

For the Salmon and Asparagus:

  • 2 lbs salmon filet, cut into six 6 oz portions
  • 2 lbs 2 bunches asparagus, fibrous ends removed
  • Salt and black pepper
  • 1 Tbsp olive oil
  • 1 small lemon, sliced into rings for garnish

For the Lemon-Garlic-Herb Butter:

  • 6 Tbsp 85 grams unsalted butter, softened (*see quick softening note)
  • 2 Tbsp fresh lemon juice, from 1 small lemon
  • 2 garlic cloves, pressed or minced
  • 2 Tbsp fresh parsley, finely chopped
  • 1 tsp salt, we used sea salt
  • 1/4 tsp black pepper

Prep:

  • Adjust oven rack to upper third and preheat to 450˚F. Using parchment paper, line a large rimmed baking sheet, trimming the paper to fit snugly without covering the pan’s sides (this keeps the paper from burning under the broiler).

How to make One-Pan Asparagus Salad

  1. Arrange a row of salmon filets in the middle of the baking pan that has been lined. Arrange the asparagus, cut to size, on the salmon’s sides. Lightly drizzle olive oil over the asparagus, then roll to coat. Season the fish and asparagus with salt and pepper.
  2. Mash all of the ingredients for the flavored butter with a fork in a medium-sized bowl. It takes a few minutes to come together, but if you keep pounding, it will eventually. If you’d rather, you can even do this task in a food processor.
  3. Evenly distribute 3/4 of the flavored butter over the fish; it doesn’t have to be perfect. Brush the asparagus with the leftover butter mixture. Place a slice of lemon on top of every salmon filet and bake, uncovered, at 450˚F for 10 to 12 minutes (bigger filets require 12 minutes to cook). To give the salmon a golden hue, bake it for a further two to three minutes on BROIL in the oven. Bake the salmon until it’s cooked through and flaky.

Note:

How to Soften Butter Quickly: Stick of butter should be wrapped and placed in an airtight ziploc bag. The bag should be submerged in warm (100˚F) water with a weight over the top to prevent it from floating. Give it a good 10 to 15 minutes to soften.
